Chicken with Beans and Sweet Potatoes

When it comes to plug-in kitchen appliances, my daughter says I'm the plug-in appliance Queen! I have them all and 2 of most, but my all time favorite has got to be my slow-cooker. To me that is the best kitchen invention known to mankind. You fill it up in the morning and presto you have dinner that night.

There are a whole world of things you can do with a slow-cooker, from breakfast to dinner, even deserts and candy. The options are endless! Bubba and the crew love their spicy foods, this spicy, smoky Latin chicken dish requires just 15 minutes of prep time, so it's easy to throw together in the morning.

 

Ingredients:

  • 3 POUNDS BONE-IN SKINLESS CHICKEN THIGHS
  • 2 TEASPOONS GROUND CUMIN
  • 1/4 TEASPOON SALT
  • 1/4 TEASPOON GROUND BLACK PEPPER
  • 1 TEASPOON SMOKED PAPRIKA
  • 1/2 TEASPOON GROUND ALLSPICE
  • 1 CUP CHICKEN STOCK 
  • 1/2 CUP SALSA
  • 2 LARGE CLOVES GARLIC, GRATED
  • 2 CANS { 16 OUNCES EACH } BLACK BEANS, RINSED AND DRAINED
  • 2 POUNDS SWEET POTATOES, PEELED AND CUT INTO 2-INCH PIECES
  • 1 JARED ROASTED RED PEPPER, CUT INTO STRIPS { 1 CUP }
  • 1/3 CUP LOOSELY PACKED FRESH CILANTRO LEAVES, CHOPPED
  • LIME WEDGES

Directions:

  1. Sprinkle chicken thighs with1/2 teaspoon cumin, salt and pepper. Heat a 12-inch nonstick skillet over medium heat until hot; add chicken and cook until ell browned on all sides, 10 to 12 minutes. Transfer chicken to a plate. Remove skillet from heat.
  2. In the same skillet, combine smoked paprika, allspice, sock, salsa, garlic, and remaining 1 1/2 teaspoons cumin.
  3. In a 6 1/2-quart slow-cooker bowl, combine beans and sweet potatoes.
  4. Place chicken on top of sweet potato mixture; pour stock mixture over chicken.
  5. Cover the slow-cooker and cook on Low 8 hours or on High 4 hours.
  6. With tongs or slotted spoon, remove chicken pieces to a large platter. Gently stir red pepper strips into sweet potato mixture, then spoon mixture over chicken.
  7. Sprinkle with cilantro and serve with lime wedges.

ACTIVE TIME: 15 MINUTES
TOTAL TIME: 8 HOURS ON LOW OR 4 HOURS ON HIGH
MAKES: 6 MAIN-DISH SERVINGS
